Easy and Moist Strawberry Clafoutis

  • 500g of fresh strawberries
  • 3 whole eggs
  • 100g of powdered sugar
  • 1 sachet of vanilla sugar
  • 100g of flour
  • 30g of melted butter
  • 25 cl of whole milk
  • 10 cl of liquid cream
  • 1 pinch of salt
  • Butter for the mold
  • Icing sugar for finishing (optional)

Step-by-step preparation

1. Prepare the strawberries

Quickly rinse the strawberries under cold water, drain them, and hull them. Cut them in half or quarters depending on their size. Set aside.

2. Prepare the clafoutis mixture

In a large bowl, crack the eggs and whisk them with the sugar and vanilla sugar until the mixture turns pale. Add the sifted flour and a pinch of salt, then mix until you have a smooth batter. Next, stir in the melted butter, milk, and cream. Whisk until you have a smooth, fluid texture, similar to that of a thick pancake batter.

3. Prepare the mold

Generously butter a gratin dish or ceramic dish. Sprinkle lightly with sugar to obtain a thin caramelized crust when baked.

4. Assemble the clafoutis
